The Reverend John Francis Morton, Minister of the Parishes of St Patrick’s Rock and Hoar
Abbey and Preacher of the Cathedral in the City of Cashel erected the building as a public
Lecture Hall in 1861.

He secured a lease for one thousand years at a rent of one old shilling per annum if
demanded.

In 1902, after Morton’s death, the building was vested in the diocesan Trustees to be used
as a Synod Hall for the Synod and Council of the Diocese of Cashel and Emily.

It continued in use as a Synod Hall and Harvest Festival until 1950 when it was purchased
by a Cashel businessman who held it until he sold it to the Matthiae Family in 1968.

German Chef Hans Peter Matthiae and his wife Derry opened Chez Hans later that year.
The husband and Wife team ran Chez Hans for over thirty years.

In 1998 Hans and Derry’s eldest son Jason took over the running of the kitchen having
returned from working in some of London’s finest kitchens. Jason’s wife Louise joined in
2004 as restaurant manager.

In 2004 Jason’s brothers Stefan and Hans opened Cafe Hans.
